CLASSIC RED SKIN POTATO SALAD

Goes good with any barbeque meal – hamburgers, spare ribs, chicken and grilled portobello mushrooms.

SERVES: 4-6

Ingredients:

1 package of Fresh Sides Red Potatoes, skin on- “ no peeling required
(sliced or quartered for best results)

1/4 cup diced celery
2 hard-boiled eggs chopped
1/4 cup mayonnaise
1/8 cup cider vinegar
1/4 cup chopped scallions
1/2 tsp. celery salt
1 tbsp. chopped parsley
Salt and pepper to taste

Preparation:

1. Open the re-sealable package of Fresh Sides Red Potatoes, cut potatoes (sliced or quartered). Return potatoes to the bag and reseal.

2. Place sealed bag on microwaveable plate and microwave for 8 minutes on high. Using potholders, carefully remove plate from microwave. Let rest for 1 minute. Use the cool touch panels at the top and bottom of bag for safe handling. Carefully open the seal with a fork.

3. Let potatoes cool.

4. Mix all of the other ingredients and potatoes together.

5. Serve warm or chilled.
