LEMONY POTATOES & BROCCOLI

Great with steak, lamb, fish,chicken or by itself, with a good grating of your favorite cheese.

SERVES: 6

Ingredients:

1 package of Fresh Sides White Potatoes, skin on - “ no peeling required
(halved, or sliced)

2 tablespoons olive oil
1/3 cup lemon juice
1 garlic clove, smashed
Pinch of salt

1 cup cut broccoli florets
Lemon, zest optional

¼ cup grated parmesan or your favorite cheese

Preparation:

1. Open the re-sealable package of Fresh Sides White Potatoes, cut potatoes in wedges or slice, add olive oil, lemon juice, garlic and salt.

2. Place sealed bag on microwaveable plate and microwave for 5 minutes on high.

3. Using potholders, carefully remove plate from microwave.  Let rest for 1 minute.  Use the cool touch panels at the top and bottom of bag for safe handling. Carefully open the seal with a fork.

4. Add lemon zest & broccoli, re-seal securely and microwave for additional 3 minutes.
