SMASHED RED POTATOES*

Goes great as a side dish with beef, shrimp or chicken. Or serve along with your favorite side with a knob of butter and sliced scallions or a dollop of pesto

SERVES: 4-6

Ingredients:

1 package of Fresh Sides Red Potatoes - “ no peeling required
(wedged, or diced)
* can use recipe for white or yellow potatoes as well

2-3 garlic cloves, smashed
2 tablespoons olive oil
pinch salt & pepper

2 tablespoons of butter
¾ - 1 cup milk for desired consistency

Preparation:

1. Open the re-sealable and add garlic, olive oil, salt and pepper

2. Place sealed bag on microwaveable plate and microwave for 8 minutes on high.

3. Using potholders, carefully remove plate from microwave.  Let rest for 1 minute.  Use the cool touch panels at the top and bottom of bag for safe handling. Carefully open the seal with a fork. Place in serving bowl to mash.

4. Add ¾ - 1 cup milk for desired consistency and the butter.  Using a potato masher gently mash all the ingredients in serving bowl to mash.  Adjust the seasoning with salt and pepper, serve.
